Gluten is a protein substance found in foods processed from wheat and related grains like barley and rye. This substance gives dough its stretchy property and helps it hold its form.

Recently there have been diets that have taken gluten out of foods and claimed that it is a much healthier option. The only situation that gluten-free diets will positively effect your body is if you have celiac disease. Only about 0.5% to 1% of the people in the U.S. and United Kingdom have celiac disease which is the intolerance of gluten. It causes allergic type responses of swelling and an abnormal digestive system.

Gluten is not an unhealthy substance unless you are in the very small population with the intolerance. If you are looking to make healthier options in your diet, don’t concentrate so much on gluten free foods. A better health measure is the glycemic level of the foods you ingest
